Who doesn't remember the witch's candy house made of gingerbread and sugary treats to encourage hungry children into her lair? Here’s an easy, fun, and festive twist on the traditional mince pie recipe: Gingerbread Pastry! This sweet, spiced pastry adds a whole new layer of flavor and will make your mince pies the star of your Stir Up Sunday celebrations and straight out of a fairytale!



Ingredients:

For the Gingerbread Pastry:

  • 225g plain flour

  • 100g cold butter, diced

  • 50g dark brown sugar

  • 1 tsp ground ginger

  • 1/2 tsp ground cinnamon (or more if you prefer your gingerbread to have more of a fiery kick)

  • 1/4 tsp ground cloves

  • 1 egg yolk

  • 2-3 tbsp cold water (or more as needed)

For the Mince Pie Filling:

  • 1 jar of your favorite mincemeat (store-bought or homemade!)



Method:

  1. Make the Pastry: In a large mixing bowl, combine the flour, spices, and dark brown sugar. Add the cold butter and rub it into the flour until it resembles breadcrumbs. This is where the magic happens – the butter adds richness, while the spices fill the kitchen with delicious holiday smells.

  2. Bring It Together: Add the egg yolk and mix. Gradually add the cold water, one tablespoon at a time, until the dough comes together. Be careful not to overwork it – you want a soft, slightly sticky dough. Once combined, wrap it in cling film and chill in the fridge for at least 30 minutes.

  3. Roll Out and Cut: Preheat your oven to 180°C (fan oven 160°C). Roll out the chilled dough on a floured surface until it’s about 3-5mm thick. Use a round cutter to cut out bases for your pies and top pieces (if you're not going open-topped). Place the bases into a 12-hole tart tin and spoon a heaping teaspoon of mincemeat into each one.

  4. Top the Pies: Use your round cutter to create lids for the pies. Gently place the lids over the filled bases and press down the edges to seal. You can use a fork to crimp the edges or get creative with festive shapes like stars or holly leaves on top. Make sure to add a little hole with a cocktail stick to avoid any baking explosions!
